Consuming soup is one of my hobbies and my family considers October – March to be ‘Soup Season’. This topic deserves a more thought-out full blogpost with links to all of our favorite recipes because we have lots of favorites.
My biggest challenge is that I never follow the recipe directly and then carry guilt when sharing the recipe knowing I tweak nearly every one. This is something that I need to unpack with my therapist at some point. So while we wait for me to get over the fear of disappointing all of you, I am going to start throw out recipes, including tweaks, as I can and links where it’s easiest.
I made this soup last night after seeing it on TikTok and can’t find the exact recipe online. They all call for cream cheese, which I didn’t use.
I am putting it here and giving credit to the collective “Italian Sausage Ditalini Soup” Google search and moving along. In a Marco Polo to a friend today, I described it as “homemade, creamy spaghettios and deconstructed meatballs”. It came together fast. Didn’t require a ton of dishes. And reheated great….
I always add more broth than the recipe calls for because I am fully team “brothy soup” so use this information as you wish and add a few extra splashes of stock or cream. Hope you love it as much as we did…
